Fermentation monitoring & reporting

Core KPI

Accurate, automated dough growth measurement

Overview

In bakeries, the traditional way to judge dough fermentation is by sight: bakers estimate when the dough has doubled or tripled in size. This subjective method leads to inconsistencies in texture, flavor, and timing — and often results in wasted time when dough ferments longer than necessary.

The client needed a solution that could standardize fermentation monitoring, improve product quality, and optimize production time.

The Challenge

  • Dough growth is usually judged visually, creating variation between bakers.

  • Inconsistent fermentation affects bread texture, flavor, and overall quality.

  • Waiting too long wastes valuable time in production.

  • Lack of historical data makes it difficult to optimize recipes.

Our Solution

We created a camera-based app that measures dough volume growth automatically:

  • Simple calibration – the container is placed with reference marks (stickers or a printed A4 sheet).

  • Real-time monitoring – app tracks dough growth, showing percentage increase, growth curve, and elapsed time.

  • Alerts & targets – users receive alerts when the dough reaches the desired point (e.g., +100% volume).

  • Reporting – data per batch/recipe/temperature to standardize processes and refine timing under different conditions.

Business Benefits

How It Works

Setup

Place dough container with calibration reference.

Monitoring

Camera tracks dough size over time.

Analysis

Growth percentage and curve are calculated in real time.

Alerts

App notifies when dough reaches the target volume.

Reports

Batch history with growth curves and conditions.

Technical Highlights

  • Computer vision to segment dough in video/photo and measure growth.

  • Calibration using reference marks to convert pixels into real-world dimensions.

  • Volume estimation from container shape (cylindrical/rectangular).

  • Temporal analysis to smooth fluctuations and estimate growth rates.

  • Runs locally on smartphones or store gateways, with optional web sync.

Key Results

Automated, accurate dough growth monitoring.

Standardized fermentation across shifts and stores.

Improved bread quality backed by objective data.

Usable on any smartphone with a quick setup.
